1 C all-purpose flour
2/3 C sugar
1/3 + 1 Tbs unsweetened cocoa, divided
2 tsp baking powder
1/2 tsp salt
1/2 C water
2 Tbs vegetable oil
1 C packed light brown sugar
1 3/4 C espresso *
1. Heat oven to 350 degrees F. Spray 8x8-inch glass baking dish with nonstick cooking spray (or use butter). In medium bowl, whisk together flour, sugar, 1/3 cup cocoa powder, baking powder and salt. Whisk in water and oil until smooth. Spread in baking dish. Sprinkle with brown sugar and remaining tablespoon of cocoa powder. Slowly pour espresso over batter.
2.Bake 40 minutes or until toothpick inserted partway down comes out clean. Let stand 30 minutes. Serve warm. (Great with homemade whipped cream!)
TIP *Instant espresso coffee powder or instant coffee granules mixed with water can be used in place of brewed espresso.
